Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 16 oz. package frozen sliced strawberries in syrup
  • 1 cup heavy cream
  • 2 tablespoons cornstarch

Instructions:

  • Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Fold in the chocolate chips until evenly distributed throughout the dough.
  • Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, then form two balls for the bear ears. Leave some space between each cookie for spreading.
  • Bake in the preheated oven for 9-11 minutes, or until the edges are lightly golden brown.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • While they cool combine strawberries, cream and corn starch in medium saucepan
  • Cook over medium heat, whisking constantly until thickened, about 8-10 minutes.
  • Remove from heat and chill before use.
  • Assemble the 2 cookies and filling and make a sandwich!
