CHOCOLATE CHIP COOKIE SANDWICH WITH STRAWBERRY FILLING
Fun snacks to bring for a girls date or even to make with friends. The chocolate and strawberries mesh beautifully together creating a sweet and refreshing taste

Ingredients:
Cookies:
Strawberry filling:
- 1/2 cup (1 stick) unsalted butter, softened
- 1/3 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semisweet chocolate chips
- 1 16 oz. package frozen sliced strawberries in syrup
- 1 cup heavy cream
- 2 tablespoons cornstarch
Instructions:
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the chocolate chips until evenly distributed throughout the dough.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, then form two balls for the bear ears. Leave some space between each cookie for spreading.
- Bake in the preheated oven for 9-11 minutes, or until the edges are lightly golden brown.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- While they cool combine strawberries, cream and corn starch in medium saucepan
- Cook over medium heat, whisking constantly until thickened, about 8-10 minutes.
- Remove from heat and chill before use.
- Assemble the 2 cookies and filling and make a sandwich!
